Malian Ginger Juice


Ingredients

  •     1/3 pound fresh unpeeled ginger root, cut into 1/2-inch chunks
  •     1 1/2 cups water, or as needed to cover
  •     4 large lemons, juiced
  •     1 cup white sugar
  •     7 cups water, or as needed
  •     16 leaves fresh mint, crushed

Instruction

    Place ginger into a blender, cover with 1 1/2 cup water, and blend until ginger is thick and pasty. Strain and squeeze juice from ginger pulp into a 2-quart pitcher, squeezing ginger mixture as dry as possible.
    Stir lemon juice and sugar into ginger juice until sugar has dissolved. Pour 7 cups water into mixture, stir to combine, and serve garnished with crushed mint leaves.

Apple, Lemon & Ginger Juice



Apple, Lemon & Ginger Juice
Ingredients
  • 2-3 apples
  • 1/2 lemon
  • 1 piece fresh ginger about 1 inch long

Instructions:

Throw the 1/2 lemon in the juicer, seeds, peel and all. Add the ginger. I follow up with the apples to make sure everything else gets pushed through. I remove the stems and cut the apples into quarters because the input chute to my juicer is quite small, but if your juicer can handle it just remove the apple stems.

Serve over ice and drink immediately.

Health Benefits of Ginger


Ginger is classified as a herb which have been widely used as traditional medicine or spice in many cultures throughout the world. Ginger is often referred to as a root, but it is actually an underground stem (called rhizome).

The rhizome is branched with small “limbs”. It has brown skin that is thin if harvested when young, or becomes thick when harvested at maturity.

The color of the flesh varies from pale yellow to white or pink, or even red, depending on the variety.

Young ginger is fragrant, pungent, fleshy and juicy with a mild spicy taste. Whereas old ginger is fibrous and almost dry and tends to be spicier than its young counterpart.

A recent study showed that young ginger brings down body temperature as in the case of fever. Whereas the old (dryer) ginger brings up the body temperature as in the case of a cold and suitable during winter. When going on an extended juice feasting, I recommend the use of old ginger for this reason.
